INGREDIENTS
Servings: 4
Fresh peaches
8, peeled, pitted, sliced into thin wedges
White sugar
¼ cup
Brown sugar
¼ cup
Ground cinnamon
¼ tsp.
Ground nutmeg
1/8 tsp.
Fresh lemon juice
1 tsp.
Cornstarch
2 tsp.
All-purpose flour
1 cup
White sugar
¼ cup
Brown sugar
¼ cup
Baking powder
1 tsp.
Salt
½ tsp.
Unsalted butter
6 tbsp, chilled, cut into small pieces
Boiling water
¼ cup
White sugar
3 tbsp.
Ground cinnamon
1 tsp.
DIRECTIONS
  1. Heat the oven to 425° F/220° C/Gas Mark 7.
  2. Combine the first seven ingredients (from peaches to cornstarch) in a large bowl. Toss to coat.
  3. Pour the mixture into a 2-quart baking dish and bake for 10 minutes.
  4. Meanwhile, combine the next five ingredients (from flour to salt) in a large bowl.
  5. Add butter and mix with your fingertips or a pastry blender until the mixture looks like coarse meal. Add water and stir until the mixture is just combined.
  6. Take the peach mixture out of the oven and top with the flour mixture.
  7. Mix the remaining sugar and cinnamon and sprinkle the cobbler with the mixture.
  8. Bake for 30 more minutes or until the topping is golden.
