INGREDIENTS

Pie crust
1 (9 inch), baked
Fresh strawberries
1 quart
White sugar
1 cup
Cornstarch
3 tbsp.
Water
¾ cup
Heavy whipping cream
½ cup
DIRECTIONS
- Prepare a baked pastry shell, put half of the strawberries in it, and arrange the strawberries in the shell.
- Mash the rest of the strawberries in a medium saucepan, add sugar, and mix well.
- Heat the saucepan over a medium heat and bring it to a boil. Stir frequently.
- Whisk together cornstarch and water in a small bowl. Add the cornstarch mixture to the boiling strawberry mixture gradually, stirring.
- Reduce the heat and let it simmer for 10 minutes or until the mixture thickens, stirring constantly.
- Pour the mixture over the strawberries in the shell and chill for several hours before serving.
- Whip cream in a small bowl until soft peaks appear. Serve the pie slices, with a dollop of whipped cream on each.
