INGREDIENTS
Servings: 8
Pie crust
1 (9 inch), baked
Fresh strawberries
1 quart
White sugar
1 cup
Cornstarch
3 tbsp.
Water
¾ cup
Heavy whipping cream
½ cup
DIRECTIONS
  1. Prepare a baked pastry shell, put half of the strawberries in it, and arrange the strawberries in the shell.
  2. Mash the rest of the strawberries in a medium saucepan, add sugar, and mix well.
  3. Heat the saucepan over a medium heat and bring it to a boil. Stir frequently.
  4. Whisk together cornstarch and water in a small bowl. Add the cornstarch mixture to the boiling strawberry mixture gradually, stirring.
  5. Reduce the heat and let it simmer for 10 minutes or until the mixture thickens, stirring constantly.
  6. Pour the mixture over the strawberries in the shell and chill for several hours before serving.
  7. Whip cream in a small bowl until soft peaks appear. Serve the pie slices, with a dollop of whipped cream on each.
