INGREDIENTS

Acorn squash
1 (2 lb), halved lengthwise, seeded, and cut into 3/4-inch slices
Grated Parmesan cheese
1/4 cup
Fresh thyme
8 springs
Olive oil
2 tbsps
Salt
1/2 tsp
Ground black pepper
1/4 tsp
DIRECTIONS
- Preheat oven to 400° F (200° C).
- Place squash slices, cheese, thyme springs, oil, salt, and pepper in a bowl. Toss until the squash is evenly coated. Spread the squash slices into a jelly roll pan.
- Roast in the oven about 30 minutes (until golden brown).
