INGREDIENTS
Servings: 4
Chicken breasts
1 lb., boneless, skinless, cut into pieces
Parmesan cheese
½ cup, divided in half
Cold water
¼ cup
Salt
½ tsp.
Pepper
1/8 tsp.
Panko breadcrumbs
1 cup
DIRECTIONS
- Heat the oven to 400° F/200° C/Gas Mark 6.
- Prepare a baking sheet and line it with aluminum foil or parchment paper. Set aside.
- Add all but the last ingredients (from chicken breasts to pepper, take half of the total Parmesan amount) to a food processor and pulse for about 1 minute or until all the ingredients are well-combined.
- Place the breadcrumbs and the rest of the cheese in a shallow dish.
- Shape small nuggets from the minced chicken mixture and coat them with the breadcrumb mixture.
- Place nuggets on a baking sheet and drizzle with oil.
- Bake for 12 to 15 minutes, then cook in the broiler for 2 to 3 minutes or until nuggets become lightly golden.
- Serve warm with ketchup or your favorite dip.
