INGREDIENTS
Servings: 4
Macaroni
2 cups
Butter
2 tbsps
Brown onions, small diced 
2
Plain flour
4 tbsps
Skim milk
4 cups
Dijon mustard
2 tbsps
Light cheese
1 cup, grated
Tuna in brine
1 can
Fresh parsley
3 tbsps, chopped
Wholegrain breadcrumbs
1 cup
DIRECTIONS
  1. Pre-heat oven to 350° F/180° C/ Gas Mark 4.
  2. Cook the pasta according to the package directions. Drain and run under cold water.
  3. Melt butter in a large pan. Add diced onions, fry until translucent. Stir in the flour, cook for another minute and remove from heat.
  4. Add skim milk, whisk well. Return to heat and bring to boil.
  5. Remove from heat. Mix in Dijon mustard, grated cheese and tuna.
  6. Add pasta, mix until well combined. Spoon (or pour) into a baking dish, sprinkle with bread crumbs and bake until the top is golden (about 20 minutes).
  7. Serve sprinkled with parsley.
