INGREDIENTS
Servings: 3
Onion
1, large, cut into ¼-inch slices
Flour
1 ¼ cups
Baking powder
1 tsp.
Salt
1 tsp.
Egg
1
Milk
1 cup
Dry breadcrumbs
¾ cup
Seasoning salt
to taste
Oil
for frying, about 1 quart
Deep-fryer
for frying
DIRECTIONS
  1. Add oil to a deep-fryer and heat it to about 365 ° F.
  2. Split onion pieces into rings and set them aside.
  3. Combine flour, baking powder, and salt on a separate bowl.
  4. Dip onion rings into the flour mixture and set aside.
  5. Add egg and milk to the flour mixture and whisk with a fork.
  6. Dip the floured rings into the batter to coat well and place them on a wire rack to drain. Leave until the batter stops dripping. To clean up easier, place the wire rack over aluminum foil.
  7. Place the dry breadcrumbs on a plate or a shallow dish and spread them evenly.
  8. Place the rings in the crumbs, one at a time, and scoop the crumbs over the rings to coat them well. Make sure the coating clings well, too.
  9. Deep fry the rings for 2 to 3 minutes (several at a time) or until they’re golden brown.

Place the onion rings on paper towels to drain, season with salt, and serve.
