Perfect Polenta

INGREDIENTS
Servings: 4
Parmigiano-Reggiano cheese 
1/2 cup, grated (more for garnish)
Polenta 
1 cup
Water 
4 cups
Fine salt 
1 tsp
Butter, divided 
3 tbsps, divided
DIRECTIONS
  1. Pour water in a large saucepan. Salt and bring to a boil. Whisking, add polenta slowly to the water. Make sure there are no lumps.
  2. Reduce heat to low. Continue cooking for about 5 minutes, whisking (until it just starts to thicken). Cook for half an hour, covered, whisking or stirring with a wooden spoon every 5 min. Cook until it's creamy.
  3. Remove from heat. Add 2 tbsps butter and stir. Add 1/2 cup cheese and stir until the cheese has melted.
  4. Allow to stand for 5 minutes, covered. Stir and season with salt. Transfer the palenta to a serving bowl. Top with 1 tbsp of butter and 1 tbsp cheese for garnish. Serve and enjoy your Creamy Polenta!
