Easy potato pancakes will put your leftover mashed potatoes to delicious use.
INGREDIENTS
Servings: 3
Mashed potatoes
2 cups
Egg
1, beaten
Salt
1 tsp., or to taste
Cheddar cheese
¼ cup
Butter
1 tbsp.
DIRECTIONS
- Mix potatoes with egg and cheese; season with salt.
- Add butter to a large griddle; melt over medium heat.
- Ladle about ¼ cup of the potato mixture into the griddle; use a spatula to flatter to a thickness of half an inch. Let cook for about 5 minutes, flip, cook for 5 minutes more. Ready pancakes are golden brown on both sides.
- Serve hot with crème fraiche, plain yogurt, or sour cream.
