INGREDIENTS
Servings: 8
1 baked pie crust (get the here)
Tart red cherries
1 (14 oz.) can, pitted (can be replaced by sweet cherries)
Sugar
1/3 cup + 1 tbsp.
Cornstarch
2 tbsp.
Butter
1 tsp.
Ground cinnamon
½ tsp.
Almond extract
1 tsp.
2 ½ medium bananas
Sweetened vanilla whipped cream
for serving, optional
DIRECTIONS
  1. Whisk together cornstarch and sugar in a medium-sized saucepan. Add cherries and their juices and stir to combine.
  2. Bring the mixture to a boil and keep boiling for 1 minute. Stir constantly.
  3. Remove the saucepan from the heat and add butter and cinnamon, stirring.
  4. When the mixture is cooled, add almond extract.
  5. Put the banana slices in the pie crust and top it with the cherry mix.
  6. Chill for 3 hours or a bit less.
  7. Serve the pie with sweetened vanilla whipped cream.
