These pumpkin cookies are the perfect treat for Halloween!
INGREDIENTS

Shortening
1/2 cup
Packed brown sugar
1 1/4 cups
Large eggs
2
Ground nutmeg
1/2 tsp
Raisins
1 cup (optional)
Walnuts
1 cup, chopped (optional)
Vanilla extract
1 tsp
Canned pumpkin
1 1/2 cups
All-purpose flour
2 1/2 cups
Baking powder
4 tsps
Ground cinnamon
1/2 tsp
DIRECTIONS
- Preheat oven to 350° F (175° C/Gas mark 4). Prepare a cookie sheet by greasing it.
- Cream together shortening and white sugar. Add eggs and mix well. Add vanilla and pumpkin puree.
- In a bowl, combine all the dry ingredients. Blend into the pumpkin mixture. Add walnuts and raisins. Mix.
- Drop by heaping teaspoons onto the prepared cookie sheet.
- Bake in the preheated oven for 10-15 minutes. Enjoy your Pumpkin Cookies!
