These Pumpkin cookies are the perfect treat to bake for festive fall comfort food!
INGREDIENTS

All-purpose flour
1 cup
Quick-cooking oats
½ cup
Baking soda
½ tsp
Ground cinnamon
½ tsp
Salt
¼ tsp
Butter
½ cup, softened
Brown sugar
½ cup
White sugar
½ cup
Egg
1
Vanilla extract
½ tsp
Canned pumpkin puree
½ cup
Raisins
1 cup
DIRECTIONS
- While heating your oven to 350 degrees F/175 degrees C, mix the flour, oats, baking soda, cinnamon and salt in a large bowl.
- In a separate bowl, whisk the butter, brown sugar and white sugar together. Add one egg, vanilla extract and pumpkin puree; stir well. Gradually stir in the flour mixture. Add raisins.
- Use a teaspoon to form cookies. Place dough balls on cookie sheet. Bake for about 9 minutes. Let them cool completely before removing.
