Sweet and savory, this Pumpkin Seed Spread is healthy, yummy, and very adaptable.
INGREDIENTS

Vegetable oil
1/2 cup
Garlic
8 cloves, peeled, quartered
Green pumpkin seeds
2 cups
Onion
1/2 cup, diced
Salt
1 tsp
Water
1/2 cup
Apple cider vinegar
2 tsps
Jalapeno chilies
2 tbsps, diced
Apple juice
3/4 cup
Limes
2, juiced
Fresh cilantro leaves
1 cup
DIRECTIONS
- Place garlic in a skillet. Add oil. On low heat, cook for 8 minutes, until it starts to soften. Then, remove from heat. Allow the garlic to cool.
- Place seeds in a skillet. Cook over medium for 3 minutes, until hot and fragrant. Remove the skillet from heat. Transfer the seeds to a bowl.
- In a skillet over high, heat oil. Add diced onion and jalapeno. Cook for 3 minutes, until edges start to brown. Add apple juice. Over medium heat, cook for 5 minutes, until the liquid reaches a syrup-like consistency. Remove the skillet from heat.
- In a food processor, combine seeds, onion mixture, cilantro leaves, garlic, oil, lime juice, and salt. Pulse on and off until the mixture reaches the consistency of a coarse paste (about 2 minutes).
- Transfer the mixture to a bowl. Refrigerate for 2 hours. Adjust seasonings with additional salt or apple juice if desired. Serve and enjoy your Pumpkin Seed Spread!
