INGREDIENTS

Packed brown sugar
2 cups
Vegetable oil
1 cup
Solid pack pumpkin puree
1 ½ cup
Eggs

Flour
3 cups
Salt
3 tsp.
Baking powder
1 tsp.
Baking soda
1 tsp.
Vanilla extract
1 tsp.
Ground cinnamon
1 ½ tbsp.
Ground ginger
½ tbsp.
Ground cloves
½ tbsp.
Glair

Milk
2 tbsp.
Powdered sugar
2 cups
Shortening
¾ cup
DIRECTIONS
  1. Heat the oven up to 350°F/180°C.
  2. Thinly grease cookie sheets.
  3. Blend the oil and brown sugar together. Thoroughly blend in the pumpkin and eggs. Then add in baking powder, salt, baking soda, flour, vanilla, cloves, ginger, and cinnamon. Thoroughly blend together.
  4. Place roughly even amounts of dough onto the cookie sheets. Bake for 10 or 12 minutes at 350°F/180°C. Leave the cookies to cool a bit.
  5. How to cook the filling: whip egg white and blend it with milk, powdered sugar, vanilla. Mix thoroughly. Then add the shortening. Mix well. The substance should be light and soft.
  6. Take two cookies and make a sandwich stuffed with the filling.
