INGREDIENTS
1 English cucumber, coarsely chopped (around 2 cups)
Cooking salt
1 teaspoon 
Whole-milk yogurt
2 cups
Red onion
½ cup, finely chopped
Fresh cilantro - 1/4 cup, coarsely chopped
Fresh lime juice - 2 tbsps
Minced coriander - 1/4 teaspoon 
Ground cumin - 1/4 teaspoon 
Black pepper
1/8 teaspoon, freshly ground
Pinch of ground nutmeg
Pinch of ground cinnamon
Pinch of ground cardamom
DIRECTIONS
  • Put the cucumber in a strainer and sprinkle it with salt. Toss it well and leave it for 30 minutes to drain. Rinse the cucumber with cool water and drain again.
  • Put it on paper towels folded in several layers and place some paper towels on it. Leave it for 5 minutes and press it down from time to time.
  • Mix the cucumber, whole-milk yogurt, and the rest of the ingredients.
