You can make ramen with shiitake at home in just 30 minutes!
INGREDIENTS

Eggs

Olive oil
1 tbsp
Garlic
4 cloves, minced
Ginger
1 tbsp, grated
Low-sodium vegetable broth
4 cups
Shiitake mushrooms
4 oz
Low-sodium soy sauce
1 tbsp
Refrigerated Yaki-Soba
3 (5.6-oz) packages
Baby spinach
3 cups
Carrot
1, grated
Chives
2 tbsp, chopped
DIRECTIONS
- Put the eggs in a saucepan. Cover with water by one inch. Bring to a boil. Boil for 1 minute. Cover. Remove from heat. Set aside for 10 minutes. Drain. Allow to cool. Then, peel and halve.
- In a stockpot, heat oil over medium. Cook garlic and ginger for 1 minute, or until fragrant. Add broth, shiitake, soy sauce, and water (3 cups). Bring to a boil. Then, reduce the heat. Simmer for 10 minutes, or until softened. Add the noodles. Cook for 2 minutes, or until cooked through. Add baby spinach, carrot, and chives. Cook for 2 minutes. Before serving, garnish with eggs.
