This is BANANAS! These quick Banana Muffins are just too fluffy, tender, and delicious!
INGREDIENTS

All-purpose flour
1/2 cup
Whole-wheat flour
1 cup
Ground cinnamon
1 tsp
Baking soda
1/2 tsp
Salt
1/2 tsp
Baking powder
1 tsp
Packed dark brown sugar
1/4 cup
Coconut oil
5 tbsp, melted
Maple syrup
1/4 cup
Pure vanilla extract
1 tsp
Egg whites
2, at room temperature
Bananas
1 1/2 cups, mashed
Walnuts
1/2 cups, chopped
DIRECTIONS
- Set an oven rack to the oven's center position. Preheat the oven to 400° F (200° C/Gas mark 6). Prepare a 12-cup muffin pan by lining it with paper liners.
- In a bowl, whisk together flour (all-purpose and whole-wheat), ground cinnamon, baking soda, salt, and baking powder.
- In another bowl, whisk together brown sugar, syrup, coconut oil, vanilla extract, and egg whites. Add bananas. Stir. Add the flour mixture. Stir to combine. Add nuts. Stir.
- Transfer the batter to the muffin pan (about 1/4 cup in each cup).
- Bake in the preheated oven for 20 minutes. Use a toothpick to check for doneness: insert it in the center and check if it comes out clean. Allow to cool for 10 minutes. Transfer to a wire rack to cool completely. Serve and enjoy your quick Banana Bread Muffins!
