Salmon pairs beautifully with mushrooms in this healthy recipe!
INGREDIENTS

Salmon
½ lb, cleaned
Truffle oil
2 tsps, separated
Sea salt
to taste
Fresh ground black pepper
to taste
Lemon juice
2 tbsps
Garlic
2 cloves, minced
White button mushrooms
10 oz
Truffle oil
1 tsp
Olive oil
3 tbsps
Sea salt
to taste
Red pepper
to taste, crushed
Black pepper
to taste, crushed
Pea shoots
for serving
DIRECTIONS
- While preheating oven to 400°F/200°C/Gas Mark 6, rub a baking dish with butter.
- Add mushrooms, garlic, salt, both peppers, and both oils into the baking dish, toss to coat.
- Rub salmon with salt, both peppers, lemon juice, and both oils.
- Top mushrooms with salmon and pop in the oven.
- Bake for up to 20 minutes or until flaky when tested with a fork.
- Place salmon in ¼-lb slices on top of mushrooms; garnish the plates with pea shoots, sprinkle the dish with freshly ground black pepper. The dish is great with potatoes and mustard greens.
