This butternut squash side dish is simply irresistible!
INGREDIENTS
Servings: 4
Cooking spray
Butternut squash
3 lbs, peeled, seeded, and cut into cubes
Extra-virgin olive oil
1 1/2 tbsp
Maple syrup
1 1/2 tbsp
Salt
1 3/4 tsp
Ground cinnamon
3/4 tsp
Ground black pepper
1/2 tsp
Rosemary
1 tbsp, chopped
DIRECTIONS
- Place the oven racks in the upper and lower thirds. Preheat the oven to 400° F (200° C/Gas mark 6). Prepare 2 baking sheets: spray them with cooking spray.
- Place the squash in a bowl. Add oil, syrup, salt, cinnamon, and ground black pepper. Toss to coat. Divide between the sheets. They should not overlap.
- Bake in the preheated oven for 15 minutes. Remove from the oven. Turn using a spatula. Transfer back to the oven, switching the positions of the sheets.
- Bake for 10 minutes, or until tender. Serve.
