Roasted Garlic Mashed Potatoes

A classic mash with a flavour twist of roasted garlic. Comforting side dish!

INGREDIENTS
Servings: 6
Medium head garlic
1
Olive oil
1 tbsp.
Russet potatoes
2 pounds peeled and quartered
Butter
4 tbsp., softened
Milk
1/2 cup
Salt and pepper 
to taste
DIRECTIONS
  1. Set the oven to 350° F/175° C/Gas Mark 4.
  2. Drizzle garlic with olive oil and wrap in aluminum foil. Bake in preheated oven for 1 hour.
  3. Bring a large pot of salted water to a boil. Add quatered potatoes and cook until tender, about 15 minutes. Drain. Stir in butter, warmed up milk, salt and pepper.
  4. Remove the garlic from the oven, and cut in half. Squeeze the cloves into the potatoes. Blend potatoes with an electric mixer or a potator masher until desired consistency.
