An easy, delicious and healthy shiitake mushroom recipe - wonderfully hearty!
INGREDIENTS
Servings: 6
Mixture of baby portobello, crimini, and shiitake mushrooms, cubed into 1 1/2
inch pieces (shiitake mushrooms stemmed) – 1 ¾ pounds
Springs of rosemary, fresh, large, ½ inch chopped

Garlic cloves, chopped coarsely
5 pieces
Olive oil, extra-virgin
½ cup
Salt
to taste
Pepper
to taste
DIRECTIONS
- Heat the oven to 500°F.
- Mix the first three ingredients in a large bowl, stir the mixture, and add olive oil. Stir again gently.
- Spread the mixture in one layer on a large roasting-pan, and sprinkle with some salt and pepper.
- Roast the mixture until the mushrooms are brown on top, for about 20 minutes. Stir occasionally.
- Put the mixture into a medium-sized bowl and serve.
