Salmon Cakes and Homemade Tomato Sauce

These Salmon cakes are such a simple 30-minute recipe packed with healthy ingredients!

 4 cloves, peeled
Plain yogurt
1/3 cup, fat-free
Hot red pepper sauce

Large baking potato, sliced 
Pink salmon
1 can, drained
Plain dried bread crumbs
2 tbsps+1/2 cup
Fresh dill
½ cup, minced
1 tbsp, drained, rinsed
Kosher salt
½ tsp
Extra virgin olive oil
1 tbsp
Sun-dried tomatoes

  1. Bring water to boil in two pots: a small and a medium.
  2. In the small pot, boil 2 garlic cloves and tomatoes for 3 minutes. Drain and reserve 1/3 cup of boiling liquid.
  3. In a food processor, puree tomatoes, cooked garlic, yogurt, boiling liquid and hot sauce until smooth.
  4. In the medium bowl, boil potato and the other 2 garlic cloves until tender. Drain.
  5. In a large bowl, mash the garlic and potato together. Add salmon, bread crumbs (2 tbsps), minced dill, capers, and kosher salt. Stir to combine well.
  6. Shape 8 salmon cakes. Coat each in bread crumbs.
  7. In a large non-stick skillet, pre-heat olive oil over medium heat. Sauté the cakes in the skillet until golden brown on both side (3 minutes on one side, flip, 3 more minutes on the other side). Serve hot with the tomato sauce.
