INGREDIENTS
Servings: 6
Hearts of palm
2 14-oz cans, sliced, drained
1 tomato
medium sized, finely diced
1/2 of a white or yellow onion
small, thinly sliced
2 spring onions
finely diced
Olive oil
3 tbsps
Lime juice
2 tsps, fresh
Salt
¼ tsp
Black pepper- 1 pinch
DIRECTIONS
  1. Mix the first four ingredients in a medium-sized bowl.
  2. Take a smaller bowl and combine in it the last four ingredients.
  3. Pour this mixture over the vegetables in the medium bowl and stir it gently to coat the vegetables completely.
