INGREDIENTS

All-purpose flour
2 tbsp
Milk
1 cup
Apple cider
1 cup
Chicken broth
1/2 cup
Salt
1/2 tsp
Ground black pepper
1/4 tsp
Ground nutmeg
1 tsp
Smoked Gouda cheese
1/2 cup, shredded
Jarlsberg cheese
1/2 cup, shredded
Yukon Gold potatoes
2 lbs, sliced
DIRECTIONS
- Position the oven rack in the middle. Preheat the oven to 425° F (210° C/Gas Mark 7). Prepare an 8x12-inch baking pan by greasing it.
- Place all-purpose flour in a saucepan. Gradually add milk. Whisk to combine. Add apple cider, ground black pepper, broth, salt, and ground nutmeg. Mix. Over high heat, bring to a boil, whisking constantly. Keep cooking for 1 minute. Remove from heat.
- Combine shredded Gouda cheese and Jarlsberg cheese in a bowl.
- Place half of the Yukon potatoes in the bottom of the greased pan, slightly overlapping. Sprinkle the potatoes with half of the Gouda and Jarlsberg mixture. Place the remaining sliced potatoes on top. Pour the apple cider mixture over top.
- Bake in the preheated oven for 25 minutes.
- Then, press down on the potatoes with a spatula. Sprinkle the potatoes with the cheese mixture.
- Bake for 20 minutes, until the top is crusted and lightly browned. Before serving, allow the Scalloped Potatoes to stand for about 20 minutes.
