INGREDIENTS
Servings: 4
Oil 
1 quart
Eggs 
4
Seasoned dried bread crumbs 
4 cups
All-purpose flour 
1 cup
Pork sausage 
2 lbs
Beaten eggs
DIRECTIONS
  1. Preheat the oven to 350° F (180° C/Gas mark 4). In the deep fryer, heat oil to 375° F (190° C).
  2. In a saucepan, cover eggs with water and bring to a boil. Cover. Then, remove from heat. Allow the eggs to stand for 10 minutes. Cool and peel. 
  3. Place seasoned bread crumbs in a shallow bowl. 
  4. Flatten the sausage. Pat the sausage into thin patties. Wrap the patties around eggs, sealing. Flour the sausage. Coat with beaten eggs. Roll in seasoned bread crumbs. Deep fry until golden brown. 
  5. Bake for 10 minutes. Cut the Scotch Eggs in half before serving.
