INGREDIENTS
Servings: 8
Unsalted butter
½ cup, melted
Fresh lemon peel
1 tbsp, grated
32 clams in shell, scrubbed
32 uncooked shrimp, with shells, deveined
32 sea scallops
8 ears of corn on the cob, quartered
32 cherry tomatoes, large
Aluminum foil
8 squares, 12x12-inch
Fresh chives
1 tbsp, chopped
DIRECTIONS
  1. Heat your outdoor grill for medium heat. Oil the grate lightly.
  2. Combine the butter with lemon peel in a medium-sized bowl.
  3. Spread the foil sheets on a flat surface. Put 4 clams, 4 shrimp, 4 sea scallops, 4 pieces of corn on the cob, and 4 tomatoes on each sheet.
  4. Drizzle 1 tbsp of lemon mix over the ingredients on the foil sheets.
  5. Seal the ends of the sheets leaving some room for steam.
  6. Put the packets on the grill, cover it, and cook for about 15 to 20 min (or until the clams are open and the shrimp are pink).
  7. Serve the dish placing a packet on a plate, cutting a diagonal X through the foil, and peeling the foil back.
  8. Garnish every pack with ½ tsp of chives.
