One of the easiest weeknight halibut recipes and one of the healthiest ones, too!
INGREDIENTS
Servings: 4
Halibut
4 fillets, 7 oz.
Jerk seasoning
2 tbsp.
Olive oil
1 tbsp.
Pineapple chunks
12 oz., canned, drained
Red onion
¼ cup, diced
Jalapeno pepper
1, seeded, diced
Dried cilantro
¼ tsp.
DIRECTIONS
- Sprinkle halibut with seasoning on both sides.
- Pour olive oil in a skillet and heat it over a medium high heat until hot.
- Place halibut in the skillet and sear it on one side for about 5 minutes.
- When halibut is seared on one side and no longer sticks to the skillet, flip it.
- Sear for 1 minute on the other side, reduce the heat, and cook it for 5 to 8 more minutes or until halibut is cooked through.
- Add all the remaining ingredients (from pineapple to cilantro) to a bowl and toss well. Serve salsa with the prepared halibut.
