Shakshuka with Feta is an easy, healthy breakfast recipe that features eggs, tomatoes, and cheese.

INGREDIENTS
Servings: 8
Olive oil 
4 tbsp
Yellow onions 
1 1/2, chopped
Salt 
to taste
Ground black pepper 
to taste
Garlic 
4 cloves, minced
Ground cumin 
1 1/2 tbsp
Smoked paprika 
1/2 tsp
Harissa 
1 1/2 tsp (optional) 
Crushed red pepper flakes 
1 pinch
Tomato paste 
1 1/2 tbsp
Chopped tomatoes 
1 1/2 (28-oz) can
Sugar 
1 1/2 tsp
Eggs 
8
Feta cheese 
1 cup, crumbled
Chopped parsley
for garnish
DIRECTIONS
  1. In a skillet, heat oil over medium. Cook onions for 5 minutes, or until soft. Add garlic, cumin, 1 pinch of salt, paprika, harissa (if using), red pepper, and ground black pepper to taste. Cook for 2 minutes. Add tomato paste. Stir. Add chopped tomatoes and sugar. Cook for 10 minutes, or until thickens. 
  2. Make 8 wells in the mixture. Add eggs. Simmer for 10 minutes, or until the egg whites are set (the egg yolks should be runny). Next. sprinkle the eggs with salt and ground black pepper. Scatter the cheese and parsley. Serve and enjoy your Shakshuka with Cheese!
