Unusual, crunchy and succulent salad made with turnips, carrot and apples.

INGREDIENTS
Servings: 6
6 small purple-top turnips, peeled, ends trimmed
2 small carrots, peeled
1 large Granny Smith apple, peeled and cored
Freshly squeezed lemon juice
1 tbsp.
Onion, finely chopped
1 tbsp.
Vegetable oil
3 tbsp.  
Apple cider vinegar
1 tbsp.
Sugar
1-1/2 tbsp.
Fresh parsley, chopped
1 tbsp.
Salt and freshly ground black pepper to taste
DIRECTIONS
  1. Use the side of the grater with the largest holes to grate turnips, carrots, and apple and combine in a large bowl.
  2. Add the lemon juice and mix to coat.
  3. Add onion, oil, vinegar, sugar, and parsley. Mix well.
  4. Season to taste with salt and freshly ground pepper.
  5. Cover and chill for one hour before serving.
