Try this snappy, fresh side dish or a light supper!
INGREDIENTS
Servings: 6
Kale
12 cups, chopped
Lemon juice
2 tbsps
Olive oil
1 tbsp or more, if needed
Minced garlic
1 tbsp
Soy sauce
1 tsp
Salt
to taste
Fresh ground black pepper
to taste
DIRECTIONS
- Cook rinsed kale in a steamer for up to 10 minutes until just tender. The time will depend on how thick your kale is.
- While the kale is cooking, whisk oil with lemon juice, soy sauce, garlic, salt and pepper. Place kale into a salad bowl, top with the sauce, toss to coat.
