Healthy: Skinny Bolognese
INGREDIENTS

Cooking spray
Lean ground beef
1 lb
1 large onion, diced
Garlic
1 clove, crushed
1 red bell pepper, diced
Celery
1 stalk
Button mushrooms
7 oz, diced
Herbes de Provence
½ tsp
Mixed spice
1 tsp
Canned diced tomatoes
16 oz (1 can)
Tomato puree
3 tbsps
1 zucchini, diced
Low-fat beef broth
1 cup
Salt
to taste
Black pepper
to taste
DIRECTIONS
- Preheat a large pan to medium-high heat; spray it with cooking spray and fry the ground beef till brown. Transfer to a bowl.
- Add bell pepper, celery and onion into the same pan; cook until softened (about 3 minutes).
- Add tomatoes, mushrooms, tomato puree, Herbes de Provence and spices; cook for 3 more minutes.
- Return the beef into the pan; add zucchini and beef broth.
- Reduce heat to low.
- Simmer under cover for half an hour; stir occasionally. Adjust salt and pepper and serve.
