INGREDIENTS
Servings: 4
Fresh basil
3 cups, only leaves
Parmesan cheese
½ cup, grated
Pine nuts
¼ cup
Garlic
2 small cloves
Sea salt
½ tsp
Red pepper flakes
1/8 tsp, crushed
Extra virgin olive oil
¼ cup
DIRECTIONS
  1. Preheat a large skillet to medium-high heat. Place the pine nuts into the skillet in one even layer; toss them constantly for about 5 minutes. Transfer to a plate.
  2. In a food processor, blend together the basil leaves, Parmesan cheese, pine nuts, garlic, salt and red pepper flakes for 1 minute. With the food processor on, add olive oil by small portions to let it combine nicely. Enjoy the pesto!
  3. You can store the sauce cooked according to this Skinny Pesto Weight Watchers recipe in small mason jars in your fridge or freezer.
