INGREDIENTS

Onions
 2, sliced
Garlic
 3 cloves, minced
Fresh ginger
 2 tbsp., grated
Butter
 3 tbsp.
Brown sugar
 2 tbsp.
Chili powder
 2 tsp.
Ground coriander
 3/4 tsp.
Ground turmeric
 3/4 tsp.
Ground cinnamon
 1/2 tsp.
Ground cumin
 1/2 tsp.
Salt
1/2 tsp.
Pepper
1/2 tsp.
Canned diced tomatoes
 1 28-oz can 
Chicken broth
1 cup
Almond/cashew butter
 1/4 cup
Boneless, skinless chicken thighs
 3 lb., cut in quarters
Sour cream
 1 cup
Fresh cilantro
 2 tbsp., chopped
DIRECTIONS
  1. Put the onions, garlic, ginger, butter, sugar, coriander, cumin, cinnamon, turmeric, chili powder, salt, pepper and tomatoes into the slow cooker.
  2. Stir in almond/cashew butter into the chicken broth, pour over the vegetables and spices.
  3. Cover the slow cooker and set it to 5-8 hours.
  4. Blend the sauce with immersion blender until smooth. Add chicken, cover, cook for 30-40 minutes, until the chicken juices are clear.
  5. Add sour cream, stir. Serve with fresh cilantro.
