A perfect stew to serve with white rice - easy, nourishing, and delicious!
INGREDIENTS
Servings: 12
Beef stew meat
1 lb.
Salt
to taste
Ground black pepper
to taste
Spanish onion
½ cup, chopped
Garlic
2 cloves, minced
Red potatoes
2 cups, chopped
Diced tomatoes
1 (15.5 oz.) can
Sofrito
1 (12 oz.) jar
Green olives
½ cup, pitted and halved
DIRECTIONS
- Take a large skillet and heat it over a medium heat.
- Add beef stew meat and cook it for about 5 minutes or until completely browned.
- Season with salt and pepper and transfer meat to the slow cooker. Make sure some beef drippings are left in the skillet.
- Place the skillet to the heat again to heat the meat drippings. Add onion and garlic and sauté for 5 more minutes or until the drippings are softened. Add to the beef in the slow cooker.
- Add all the remaining ingredients, stir well, and cook on Low for about 4 to 5 hours or until beef and potatoes are tender.
