INGREDIENTS
Servings: 12
Beef stew meat
1 lb.
Salt
to taste
Ground black pepper
to taste
Spanish onion
½ cup, chopped
Garlic
2 cloves, minced
Red potatoes
2 cups, chopped
Diced tomatoes
1 (15.5 oz.) can
Sofrito
1 (12 oz.) jar
Green olives
½ cup, pitted and halved
DIRECTIONS
  1. Take a large skillet and heat it over a medium heat.
  2. Add beef stew meat and cook it for about 5 minutes or until completely browned.
  3. Season with salt and pepper and transfer meat to the slow cooker. Make sure some beef drippings are left in the skillet.
  4. Place the skillet to the heat again to heat the meat drippings. Add onion and garlic and sauté for 5 more minutes or until the drippings are softened. Add to the beef in the slow cooker.
  5. Add all the remaining ingredients, stir well, and cook on Low for about 4 to 5 hours or until beef and potatoes are tender.
