INGREDIENTS
Servings: 4
Whole wheat bread
2 slices
Minced beef round
¾ lb
Minced turkey
¾ lb
Shiitake mushrooms
1 ½ cups, sliced
Fresh onion
½ cup, grated
Dried Italian seasoning
1 tsp
Salt
¾ tsp
2 large eggs, lightly beaten
Garlic
1 clove, minced
Ketchup
2 tbsps
Dijon mustard
1 ½ tsps
Ground red pepper
a pinch
DIRECTIONS
  1. In a food processor, break the bread into crumbs.
  2. In a large bowl, combine beef, turkey, crumbs, eggs, seasoning, mushrooms, onion and salt. Shape the mixture in a 9x6-inch loaf.
  3. Place the loaf into the slow cooker.
  4. In a small bowl, combine ketchup, mustard and pepper (use a fork to stir well). Spoon the mixture evenly on top of the meat loaf.
  5. Set the slow cooker on low; cook, covered, for 5 hours.
