INGREDIENTS

Beef roast
2 lbs.
Potatoes
4, peeled, cut into 1-inch cubes
Baby carrots
1 ½ cups
Onion
1, large, quartered, pulled apart
Beef broth
1 ½ cups
Dry vegetable soup mix
1 (1 ½ oz.) envelope
DIRECTIONS
  1. Put the beef roast in the slow cooker and arrange the vegetables around it.
  2. Combine the last two ingredients (from beef broth to soup mix) and add it to the slow cooker.
  3. Cover and cook on low for 6 to 8 hours or on High for 3 to 4 hours.
