This easy yet nourishing roast recipe will make a cold night a bit warmer!
INGREDIENTS
Servings: 6
Garlic powder
½ tsp.
Dried oregano
½ tsp.
Dried thyme
½ tsp.
Salt
½ tsp.
Pepper
½ tsp.
Beef eye round
3 lbs.
Sour cream
1 (8 oz.) carton
Mayonnaise
½ cup
Horseradish
1 tbsp., fresh or prepared
Garlic
1 clove, crushed (or 1/8 tsp. garlic powder)
Beef bouillon granules
1 tsp. (optional)
DIRECTIONS
- Mix all the seasonings (from garlic powder to pepper) and rub the roast with the mixture.
- Place the roast in a slow cooker, cover, and cook on Low for about 8 to 10 hours.
- Remove the meat and leave it for 15 minutes.
- Cut meat into thin slices across the grain.
- Combine all the remaining ingredients (from sour cream to bouillon granules) for the sauce. Cover and chill.
- Serve the roast with the sauce.
