INGREDIENTS
Servings: 6
Olive oil
3 tbsp.
Onion
1, finely chopped
Garlic
6 cloves, minced
Green chili peppers
5, sliced finely
Ginger paste
1 tsp.
Whole cardamom seeds
3
Whole cloves
2
Cinnamon sticks
1 1/2, about 2 inches each
Ground cumin
1 tsp.
Ground coriander
1 tsp.
Ground turmeric
1 tsp.
Garlic powder
1 tsp.
Cayenne pepper
1 tsp.
Water
1 cup
Beef chuck
2 pounds, cut into 1 ½ inch pieces
DIRECTIONS
- Heat the oil in a skillet over a medium heat. Add onion. Cook stirring until the onion has softened and is translucent, or for about 5 min. Reduce heat to a medium-low and continue cooking until the onion is very tender and turns brown, or for about 15 minutes.
- Add the next six ingredients (from garlic to cinnamon) and continue cooking until garlic starts to brown, for about 3 to 5 minutes.
- Stir in the next six ingredients (from cumin to water) into the onion mixture. Let it simmer until the major part of the water evaporates and the mixture becomes thick.
- Add the beef pieces and stir them until coated with the spicy mixture. Simmer the beef curry over a medium-low heat stirring occasionally for about 1 to 1 ½ hours, until the beef is well cooked.
