INGREDIENTS
Servings: 8
Whole chicken
1 (3 pound)
Olive oil
1 tbsp
Salt
¼ tsp
Black pepper
¼ tsp, ground
Dried oregano  
¼ tsp
Dried basil
 ¼ tsp
Paprika
¼ tsp
Cayenne pepper
1/8 tsp
DIRECTIONS
  1. Heat the oven to 450°F/230°C/Gas Mark 8.
  2. Rinse the chicken out and in under cool running water removing the fat. Use paper towels to pat it dry.
  3. Take a small baking dish and place the chicken in the dish. Rub it with olive oil.
  4. Combine the next six ingredients (from salt to cayenne pepper) and sprinkle the mixture over the chicken.
  5. Roast the chicken for about 20 mins, then lower the oven temperature to 400°F/205°C/Gas Mark 6 and keep roasting until the minimum internal temperature reaches 165°F/74°C for around 40 mins.
  6. Let the chicken cool down for 10-15 mins, and serve.
