INGREDIENTS

Extra virgin olive oil

Medium onion, sliced thinly
½
Baby spinach
5 oz (6 cups)
Large eggs, beaten
10
Goat cheese, crumbled
1 cup
Kosher salt
 ½ tsp
Fresh ground black pepper
 ½ tsp
DIRECTIONS
  1. Pre-heat oven to 400° F/200° C/ Gas Mark 6.
  2. In a medium ovenproof skillet, heat olive oil over medium-high heat. Add sliced onion, ½ tsp of salt and ½ tsp of pepper; cook until golden brown (about 4 minutes), stirring occasionally.
  3. Add spinach into the skillet, toss until it is wilted. Pour the beaten eggs over the greens, sprinkle with cheese and cook until set at the edges (about 1 minute). Put the skillet into the oven; bake until completely set (10-12 minutes). Serve with mixed greens salad and country bread.
