Power up your breakfast with this healthy frittata made with eggs, onions, walnuts and goat cheese!
INGREDIENTS

Extra virgin olive oil

Medium onion, sliced thinly

Baby spinach
5 oz (6 cups)
Large eggs, beaten

Goat cheese, crumbled
1 cup
Kosher salt

Fresh ground black pepper

DIRECTIONS
- Pre-heat oven to 400° F/200° C/ Gas Mark 6.
- In a medium ovenproof skillet, heat olive oil over medium-high heat. Add sliced onion, ½ tsp of salt and ½ tsp of pepper; cook until golden brown (about 4 minutes), stirring occasionally.
- Add spinach into the skillet, toss until it is wilted. Pour the beaten eggs over the greens, sprinkle with cheese and cook until set at the edges (about 1 minute). Put the skillet into the oven; bake until completely set (10-12 minutes). Serve with mixed greens salad and country bread.
