Made with simple ingredients, these Potato Pancakes (or Potato Boxty) are great for breakfast!
INGREDIENTS
Servings: 3
Flour
1 cup
Raw grated potatoes
1 cup
Mashed potatoes
1 cup
Fresh chives
2 tbsp (plus more for garnish)
Cheddar
1 cup
Milk
1/4 cup
Garlic
4 cloves, minced
Sea salt
1 tsp
Ground black pepper
1/2 tsp
Butter
2 tbsp
DIRECTIONS
- In a bowl, combine flour, raw grated potatoes, mashed potatoes, chives, cheese, milk, garlic, salt, and ground black pepper. Stir to combine.
- In a skillet over medium, melt butter. Pour the batter (1/4 cup per pancake) into the skillet.
- Cook the Irish Pancakes until golden brown. Flip. Cook until each side is golden brown. Before serving, top with chives if desired. Serve and enjoy your traditional irish potato pancakes!
