This recipe is a great way to roast a large chicken!

INGREDIENTS

Salt
4 tsp
Paprika
2 tsp
Onion powder
1 tsp
Thyme
1 tsp, dried
White pepper
1 tsp
Cayenne pepper
½ tsp
Black pepper
½ tsp
Garlic powder
½ tsp
Onions, cut into quarters

Chickens (4 pounds)

DIRECTIONS
  1. Combine the first eight ingredients (from salt to garlic powder) in a small bowl.
  2. Remove the giblets from the chicken.
  3. Rinse the chicken in and out under running water, and pat it dry with paper towels.
  4. Rub the chickens with the mixture of spices, and put 1 onion into the cavity of each of them.
  5. Put the chickens into a sealable bag or wrap them with food wrap.
  6. Keep the chickens in a fridge for at least 4-6 hours, or overnight.
  7. Heat the oven to 250°F/120°C/Gas Mark 1/2.
  8. Put the chickens in a roasting dish. Bake them without a cover for 5 hr, until the minimum internal temperature reaches 180°F/85°C.
  9. Let the chickens cool down for 10 mins before serving.
