Fresh and crunchy, these zucchini sticks will become a hit of your party or family dinner!
INGREDIENTS

Zucchini
4, medium-sized
Red bell pepper
1 cup, finely chopped
Tomatoes
½ cup, finely chopped
Kalamata olives
½ cup, finely chopped
Garlic cloves
3, large, minced
Oregano
1 tbsp., dried
Ground black pepper
¼ tsp.
Feta cheese
¼ cup, crumbled
Parsley
¼ cup, finely chopped
DIRECTIONS
- Heat the oven to 350° F/175° C/Gas Mark 4.
- Cut zucchini in half lengthwise. Using a spoon, scoop out the middle of them. Discard the flesh and set aside.
- Combine the next six ingredients (from bell pepper to ground black pepper) in a medium bowl, mix well, and distribute the mixture evenly between all zucchinis.
- Put the stuffed vegetables into a large baking pan or a rimmed baking sheet and bake for 15 minutes.
- Sprinkle with cheese and broil on high for 3 minutes or until cheese is brown.
- Take the dish out of the oven, sprinkle with parsley, and serve.
