INGREDIENTS

Vegetable oil
½ cups
White sugar
1 ½ cups
Vanilla extract
2 tsp
All-purpose flour
2 cups
Cocoa powder
½ cup, unsweetened
Baking soda
1 ½ tsp
Salt
1 tsp
Zucchini
2 cups, shredded
Walnuts
½ cup, chopped
Cocoa powder
6 tbsp, unsweetened
Margarine
¼ cup
Confectioners' sugar
2 cups
Milk
¼ cup
Vanilla extract
½ tsp
DIRECTIONS
  1. Heat the oven to 350° F/177° C/Gas Mark 4.
  2. Take a 9x13 inch baking dish, grease it, and dust with flour.
  3. Combine the first three ingredients (from oil to vanilla extract) in a large bowl and stir until well blended.
  4. Mix the next four ingredients (from flour to salt) in a large bowl and add the batter to the sugar mixture.
  5. Add zucchini and walnuts and spread the mixture evenly into the baking dish.
  6. Bake the brownies for 25 to 30 min or until they spring back when touched.
  7. For the frosting, melt the cocoa powder and margarine and then set the mix aside to cool down. Blend the remaining ingredients (from sugar to vanilla) in a medium-sized bowl, and add the cocoa mixture stirring continuously.
  8. Spread the frosting over the brownies and cut them into squares. Serve.
