Whole turkey, neck, and giblets removed
1 (18 pound) 
Prepared stuffing
8 cups 
Softened butter
1/2 cup 
Salt and pepper to taste
  1. Preheat the oven to 325°F /165°C/Gas Mark 3. Set oven rack to the lowest position so the turkey will fit.
  2. Put turkey in a roasting pan and loosely fill the large body cavity with stuffing. Massage butter all over turkey skin, and season with salt and pepper. Make a tent from a large sheet of aluminum foil and place it over the bird.

  4. Place the roasting pan on the oven rack set to the lowers position so the bird fits. Roast in the preheated oven, basting all over the bird every 20 to 30 minutes. After 2 hours, take away the foil tent. Keep roasting until the internal temperature in the thickest part of the thigh reaches 180°F (82°C). If you do not have a meat thermometer, check the doneness by making a cut the thigh and the breast, if the juice is clear and not pink or red, that the bird is done. Roasting will take about 4 hours.
