Shakshuka Recipe: This easy yet hearty North African dish is the perfect comforting dinner!
INGREDIENTS

Mushrooms
1/2 cup, sliced
Olive oil
2 tbsps
Onion
1, diced
Jalapeno pepper
1, seeded and sliced
Cumin
1 tsp
Paprika
1 tsp
Large eggs

Crumbled feta cheese
2 tbsps
Fresh parsley
2 tbsps, chopped
Ground turmeric
1/2 tsp
Ground black pepper
1/2 tsp
Cayenne pepper
1/4 tsp
Crushed plum tomatoes
1 (28 oz) can
Water
1/2 cup
Salt
1 tsp
Red bell pepper
1 cup, diced
DIRECTIONS
- Heat oil in a large skillet over medium-high heat. Add diced onions and sliced mushrooms to the skillet. Add 1 tsp salt (or to taste). Stirring, cook for 10 minutes, until mushrooms are slightly browned.
- Add bell peppers and jalapeno to the skillet. Stirring, cook for 5 minutes, or until start to soften up. Add cumin, turmeric, black pepper, paprika, and cayenne. Continue cooking and stirring for 1 minute. Add tomatoes and water. Reduce heat to medium. Continue cooking for 15 minutes, until softened. Add more water if needed.
- With a spoon, make a well in the sauce for each egg. Slide the eggs into each depression. Season with salt and pepper. Continue cooking until the eggs reach the desired doneness. Enjoy your Shakshuka!
