INGREDIENTS
Servings: 8
Frozen broccoli, thawed 
2 (10-oz) packages, chopped
Chicken broth 
4 cups
Ground nutmeg 
1/4 tsp
Olive oil 
1 tbsp
Large onion, chopped 
Garlic, peeled and chopped 
3 cloves
Potato, peeled and chopped 
1
Salt
to taste
Pepper
to taste
DIRECTIONS
  1. In a saucepan, heat olive oil. Saute chopped onion and garlic until they are tender.

  2. Add chopped broccoli, potato, and broth. Bring to a boil. Reduce heat and continue cooking for about 15 minutes (until tender). 

  3. Transfer the mixture to a blender, puree until smooth. Return the mixture to the saucepan. Reheat. Season your Broccoli Soup with nutmeg, salt, and pepper to taste. Serve. Enjoy!
