Orange-and-black quesadillas are very much in the spirit of the spooky holiday! Festive and delicious!
INGREDIENTS

2 sweet potatoes
Sharp Cheddar
2 cups, divided
Black beans
1 can (15 oz.), drained, rinsed, divided
6 (10 inch) tomato flavored tortillas
Salsa
1 cup
DIRECTIONS
- Preheat oven to 450°F/230°C/Gas Mark 8.
- Scrub the sweet potatoes thoroughly; cut a couple of slashes into each.
- Place potatoes in a small baking dish and bake until tender (about 45 min).
- Turn the oven heat down to 200°F/95°C.
- Scoop the potatoes into a bowl; mash with a fork.
- Heat one tortilla in a nonstick non-buttered skillet over medium heat until softened (2 minutes).
- Flip over, sprinkle with 1/3 cup Cheddar leaving a ½ inch edge cheese-free. Let melt, then top with 1/3 cup mashed sweet potatoes. Spread evenly. Top with 2 tbsp. black beans. Fold the tortilla in half.
- Repeat with the remaining tortillas. Keep the ready ones warm in the oven.
- Serve cut into wedges, with salsa on top or on the side.
