Toffee Apples for a Chilly Day

INGREDIENTS
Servings: 8
Fine granulated sugar 
2 1/3 cups
Warm water 
1/2 cup
Small apples

Boiling water 
Red food coloring 
1/2 tsp 
Liquid glucose 
2 tbsps
White vinegar 
1 tsp
Lollipop sticks

DIRECTIONS
  1. Combine sugar, warm water, liquid glucose, and white vinegar in a saucepan. Stirring, heat to dissolve the sugar. 
  2. Then, bring to a rolling boil. Boil to 270° F/140° C (10-20 minutes). 
  3. Meanwhile, place apples in a large bowl. Cover with boiling water. Set aside for several minutes. Remove the apples from water. Dry them thoroughly with a tea towel. Remove stems. Push a lollipop stick into the hole. 
  4. Prepare a baking sheet by lining it with parchment paper. 
  5. Remove the toffee from heat. Allow to stand for about 5 minutes. Once all the bubbles have stopped, add red coloring. Stir.
  6. Quickly tilt the saucepan and dip the apples. Make sure the apple is coated. Then, allow the excess toffee to drain away. Place the apple on the baking sheet. Allow to set around 20 minutes. 
  7. If the toffee starts to thicken, place back on the heat and warm through. Serve your Toffee Apples and enjoy!
