Served with rice, this turkey a la king makes a classy vintage meal.

INGREDIENTS
Servings: 4
Butter
2 tbsp.
3 fresh mushrooms, thinly sliced
All-purpose flour
1 tbsp.
Chicken broth
1 cup
Heavy cream
½ cup
Cooked turkey
1 cup, chopped
Frozen peas
1/3 cup, thawed
Salt
to taste
Freshly ground black pepper
to taste
DIRECTIONS
  1. Cook butter in a skillet over medium low heat until it acquires a golden brown color.
  2. Add mushrooms, cook and stir until browned and tender.
  3. Add flour and vigorously stir until smooth.
  4. Add heated chicken broth by small portions; stir until thickened.
  5. Mix in cream, cubed turkey, and thawed peas.
  6. Turn heat down to low, let simmer until the mixture thickens. Taste and season with salt and pepper.
