INGREDIENTS
Servings: 4
Extra-virgin olive oil
3 tbsp
White balsamic vinegar
2 tsp
Kosher salt
½ tsp
Arugula
2 cups
Leaves of baby spinach
2 cups
Red onion
1 cup, thinly sliced
Grape tomatoes
1 cup, cut into halves
Feta cheese
½ cup, crumbled
Watermelon
2 cups, cut into bite-size chunks
DIRECTIONS
  • Combine the first three ingredients (from oil to salt) in a small bowl. Whisk them together and set aside.
  • Combine the next four ingredients (from arugula to tomatoes) in a large bowl.
  • Sprinkle the mixture with the vinaigrette and toss to coat.
  • Add feta and watermelon chunks before serving.
